- 1 pound penne pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 can (6 oz) good quality Italian tuna, packed in oil
- Salt and pepper to taste
Instructions
- Bring a large pot of liberally salted water to a boil. Add penne and cook until al dente. Reserve a cup of pasta water before draining.
- While pasta is boiling, heat olive oil in a large skillet over medium-low heat.
- Add the garlic and cook until it starts to soften, about 1 minute.
- Add 1 tablespoon of the parsley and the tuna, drained from the can. Cook for 2 minutes, breaking up the tuna with a wooden spoon.
- Add the drained penne to the skillet with the remaining parsley, salt and pepper. Toss everything together thoroughly. If the pasta seems dry, add a splash of the reserved pasta water to bring it together.
- Divide the pasta between serving plates and serve.
