Pork Chops with Vinegar Peppers

Ingredients

  • 4 Bone-in Pork Chops
  • Salt and freshly ground pepper
  • 2 tablespoons extra virgin olive oil
  • 1 jar(12 ounces) of sliced peppers packed in vinegar
  • 1/2 cup hot chicken broth

Instructions

  1. Season pork cops generously on bot sides with salt and freshly ground pepper.
  2. Heat extra-virgin olive oil in a medium saute pan over medium-high heat. Add the pork chops and cook turning once, 3-4 minutes on each side, until nicely browned. Remove Pork Chops to a plate and cover.
  3. Reserve 2 tablespoons of the brining liquid from the jar of peppers.
  4. Strain the peppers from the jar and add to the pan. Cook stirring for about a minute, and then add the reserved brining liquid from the jar. Let cook for 1 minute. Add the Chicken broth.
  5. Place the pork chops in the pan, and cover. Cook for 10 minutes, turning once half way through.
  6. Remove pork chops to a serving platter or individual places and top each one with the peppers from the pan and serve.
